Irasshaimase! (Welcome!)

Your friendly Itamae-san (Sushi Chef) has spent years perfecting his craft, and he wants you to thoroughly enjoy his creations. If you are new to Sushi, here are a few tips that will help you:

1) Using Ohashi (chopsticks) is a matter of personal preference, although a Sushi Tsu (expert) will use his or her fingers.

2) Cleanse your palate with gari (ginger) between each course to fully appreciate the subtle taste of each dish.

3) Mix your shoyu (soy sauce) dip with wasabi (horseradish) as you please - just add whatever amount appeals to your taste buds.

4) You can experiment a la carte (order sushi in any sequence you please); you can order moriawase - a mixed sushi menu; or you can ask your Itamae-san about his seasonal fare.

5) Itamae-san love to talk - and the thing they love to talk about most is sushi. So if you want to know everything about sushi, don't be afraid to ask - honor your Itamae-san by asking him what's on you mind. (Or, better still, what's on your plate!)
